Sous la Montagne (“Below the Mountain”) is a new project from winemaker Jeff Carrel and his associate Sebastien Calduch. This range of estate-bottled and négociant wines is sourced from top sites in the Roussillon and western Languedoc, showcasing the pure, unadorned fruit from old vines planted in brilliant granite and schist-based terroirs.

Tasting Notes: Offers aromas of red and black cherries and blueberries, with hints of cracked pepper, graphite, and underbrush. Soft, fine grained tannins on the palate lead to a long, persistent finish.

Serve With: A versatile wine that is excellent with spice-roasted Kabocha squash, mild lamb curry, marinated chicken skewers, and much more…

Vineyards

The Domaine Sous La Montagne DSM “Vin d’Altitude” is sourced from Jeff Carrel and Sebastien Calduch’s flaghip 37 acre estate in Ansignan (Fenouilledes, Cotes du Roussillon Villages). The estate is split into 3 main zones: La Garrigue (33%): hillside vineyard at 190-210 meters altitude with south-east to south-west exposure and granitic and clay soils; Les Dolmens (42%): hillside, granitic ridge at 370 to 400 meters altitude; Camps de l'Argent (25%): horseshoe, hillside swath of granite/clay soils at 300 to 330 meters altitude.

Composition

39% Carignan, 34% Syrah, 20% Grenache, 7% Lledoner Pelut.

Viticulture

From bush vines trained “en gobelet”. The Carignan vines average 89 and 31 years in age, the Syrah 33 years, the Grenache 30 years and the Lledoner 41 years. Manual harvest. Yields of 2.2 tons/acre.

Winemaking

Fruit from La Garrigue and Camp d'Argent was completely destemmed, with color/aroma extracted by a single delestage at the beginning of the fermentation (and infusion of the cap). All of the fruit from Les Dolmens was whole-cluster fermented, with 1 pump-over per day. Once alcoholic fermentation was complete, the wines from the respective vineyards were pressed and blended for malolactic conversion. Aged in traditional cement tanks, unoaked.
